Here's from my personal cookbook:
"Wario2006's Baked Chicken Parmigiana"
2 eggs
¼ c. milk
½ c. bread crumbs
pepper to taste
¾ c. tomato sauce
3 oz. tomato paste
3 large thawed chicken breasts, halved
1/2 c. Shredded Mozzarella cheese
1/2 c. Parmesan Sprinkle cheese
Vegetable oil
Preheat oven to 400°. In one bowl, beat the eggs and milk. In the second bowl, combine the breadcrumbs and pepper. In a 13 x 9 x 2 pan, grease the bottom with vegetable oil. Layer the bottom with the tomato sauce and tomato paste. Stir for even texture. Dip the breasts in the egg/milk mixture then the breadcrumb mixture. Place the breaded breasts on top of the sauce. Sprinkle the cheeses on top of the chicken. Bake for 45 minutes. Cheese will become golden brown and crusty.
