hello - I'm vegetarian

It is hard at first but over the years it gets easier and now I just can't imagine going back to eating meat.

the trouble with tofu is unless you know how to marinade it, it tastes pretty bland - I am a hopeless cook but I fry it in sweet chilli sauce or balsamic vinegar and stick it in a sweet and sour stir fry and it turns out quite nice...I can't seem to get it how they do in restaurants though!  I am in uk so not sure about what you can get over there...but here in health food shops you can get textured vegetable/soya protein - "TVP mince" - it's dried stuff and you just poor boiling water on it enough to just cover it.  It soaks up the water and hydrates and it takes the flavor of whatever you cook it in - eg you can cook it in gravy with vegetables for a shepherds pie, or with tomatoes for pasta and sauce in place of minced meat.  It's much better quality protein than meat and with no saturated fat it's really good for you.

Not getting enough protein with a veggie diet is a myth.  you don't really need that much protein unless you're a bodybuilder or something, most people get way more than they need. The thing to watch is iron - it's easy to get deficient if you don't eat plenty of dark green veg

This website might be more helpful than I am, as it's a USA site for veggies:

"Beyond all these perspectives is the story of a band which has been used by Cod to bless tens of thousands of people" - interesting typo on 'crossrhythms' website
